Spices
The secret ingredient
in Sambhar is the unique mixer of spices, we generally call it curry
powder. (but be aware all curry powders are not equal!) In olden days
these spices from Southern India were so much valuable and in demand,
that Romans were prepared to die for it, pay huge taxes to import
it!
The main ingredients
in the curry powder are Turmeric, cloves, Cardamom, black pepper,
red chilli, cilantro seeds, curry leaves, The spices are blended in
appropriate proportions, and ground to a fine powder and used in the
Sambhar to give its great flavour and aroma.
